Since this is breast cancer month and I am a stage III breast cancer survivor at age 40, I would feel like I am slacking if I don't remind you to get your yearly mammogram. So please schedule your mammogram NOW if you have not done so.
Okay, I have a new favorite, chocolaty, yummy recipe. I like how it totally satisfies my chocolate craving while still staying within the Paleo Diet guidelines.
BUT I LOVE how quick this cake recipe is to make!!
I made it in our kitchen the other day when my husband got home from work for the day. While asking him how his day was, I whipped up the mug cake on our kitchen island.
It was so quick that he did not even notice what I was making. When the cake was done and I started to dig into it, he said "when did you make that?" even though he was sitting at the kitchen island the whole time while I was making the recipe.
The recipe is called Chocolate Mug Cake and the reason that it is so great is that it is made in the microwave in a mug. One minute to mix up and 1 minute to cook. That is it!!!!!

Chocolate Mug Cake (gluten-free, paleo) from Downshiftology with Lisa Bryan
Ingredients
- 1/4 cup almond flour
- 2 tbsp cacao powder
- 2 tbsp maple syrup
- 1 tsp coconut oil
- 1 tsp vanilla extract
- 1 large egg
Optional Toppings
- Coconut Whipped Cream
- Organic Powdered Sugar
- Strawberries raspberries, blueberries and other fruit (I use frozen cherries, thawed and drained)
- Chocolate Chips
- Zested orange
Instructions

Whisk all of the ingredients together in a measuring cup.

Pour the batter into your mug and microwave for 1-2 minutes, or until the cake is cooked through.

Enjoy plain or top with coconut whipped cream, powdered sugar or berries.
Notes
- Make sure to read the tips above and watch the video for a chocolate mug cake that turns out perfect every time!
- If you would like to use the oven instead of microwave, you can bake this in a 3 inch ramekin at 375 degrees Farenheit for 20 minutes. But, if you don't want to just bake one mug cake and utilize your entire oven space, then I suggest making my Molten Chocolate Cake
