Wow, I never thought that I could have pancakes again!

Maybe I am a little slow on the whole diet for PMR, but yesterday was the 1st time I had had pancakes since I was diagnosed with PMR almost a year ago!

I am always at a loss as to what to eat for breakfast since eggs kind of bother my stomach.  There is not much else to eat for breakfast besides eggs and meat if you follow the Paleo or Keto diet.  I am not a big fan of meat, so I always am on the lookout for better breakfast foods that I will enjoy.

So when I found a pancake mix that fits my Paleo diet, I was elated!  The whole process took 5 minutes from start to finish.  Just add water to the mix!  I topped it with butter, blueberries, and 1 tablespoon of pure maple syrup.  On the Paleo diet, you can have limited amounts of pure maple syrup.  Just a touch was enough to make the meal very tasty indeed!

It is kind of funny to get so excited over a simple pancake.  But when deprived for so long of grains and sugar, this breakfast was a delectable feast!
